Shaved fennel, avocado and grapefruit salad By Seamus Mullen
Ingredients (2 to 4 Serves)
• 1 small fennel, shaved on a mandoline
• 4 TBSP Extra Virgin Olive oil from Spain
• 1 TBSP white wine vinegar
• 1 grapefruit, cut into wheels
• 1 tablespoon fresh basil
• 1 avocado, peeled, pitted, and diced
• 1 shallot, thinly sliced
• 1 TBSP pistachios
• 4 TBSP soft goat cheese
• Sea salt and freshly ground black pepper
Preparation
1. In a large mixing bowl, combine shaved fennel, shallot and grapefruit wheels, season with salt and pepper and drizzle with Olive Oil from Spain and vinegar and toss together.
2. Transfer to a large serving platter and arrange the salad in a flat layer. Top with goat cheese and pistachios and garnish with fresh basil. Serve immediately.
