Chimichurri with Olive Oil
Ingredients (4 pax)
• 1 bu. Oregano
• 1 bu. Parsley
• 8 spring Thyme
• 3 Garlic cloves
• 2 Bay leaves
• 1 Tbsp. Paprika
• 1 Tbsp. Pimenton
• 4 1 tsp. Red wine vinegar
• 6 Tbsp. Extra Virgin Olive Oil from Spain
• Salt and ground pepper
Preparation
1. Remove the oregano, parsley and thyme leaves from the stem, throw away the stems.
2. In a mortar and pestle place the garlic cloves, crush them and add a small pinch of salt, until you have a smooth paste. Then add the oregano, parsley and thyme and crush them all. Remove, add the rest of the ingredients, mix well, cover and place in a warm space in the kitchen for at least 5-6 hours.
